Here’s a simple and delicious Pav Bhaji recipe:

Ingredients:

For the Bhaji:

  • 2 tbsp butter
  • 1 tbsp oil
  • 1 tsp cumin seeds
  • 1 onion, finely chopped
  • 1 green chili, finely chopped
  • 1 tsp ginger-garlic paste
  • 2 tomatoes, finely chopped
  • 1 cup boiled and mashed potatoes
  • 1/2 cup boiled and mashed peas
  • 1/2 cup boiled cauliflower, finely chopped
  • 1/2 cup boiled carrots, finely chopped
  • 1/2 cup boiled beans, finely chopped
  • 1 tsp turmeric powder
  • 1 tbsp red chili powder (adjust to taste)
  • 2 tbsp Pav Bhaji masala
  • Salt to taste
  • 1/2 cup water (adjust as needed)
  • 1 tbsp lemon juice
  • Fresh coriander leaves for garnish

For the Pav (bread):

  • 6 pav buns
  • Butter for toasting

Instructions:

  1. Prepare the Bhaji:
  • Heat butter and oil in a pan. Add cumin seeds and let them crackle.
  • Add finely chopped onions and sauté until golden brown.
  • Add green chili and ginger-garlic paste, sauté for a minute until the raw smell goes away.
  • Add tomatoes and cook until they turn soft and mushy.
  • Now, add the mashed potatoes, peas, cauliflower, carrots, and beans. Mix everything well.
  • Add turmeric powder, red chili powder, Pav Bhaji masala, and salt. Cook the mixture for 3-5 minutes, mashing it with a masher or spoon.
  • Add water to adjust the consistency. Let it simmer for 7-10 minutes, stirring occasionally.
  • Once done, add lemon juice and garnish with fresh coriander leaves.
  1. Prepare the Pav:
  • Heat a pan and melt some butter.
  • Slice the pav buns horizontally and toast them on the pan until golden and crisp on both sides.
  1. Serve:
  • Serve the hot bhaji with a dollop of butter on top, toasted pav, and a side of finely chopped onions, lemon wedges, and extra coriander.
