Ingredients:
For the Bhaji:
- 2 tbsp butter
- 1 tbsp oil
- 1 tsp cumin seeds
- 1 onion, finely chopped
- 1 green chili, finely chopped
- 1 tsp ginger-garlic paste
- 2 tomatoes, finely chopped
- 1 cup boiled and mashed potatoes
- 1/2 cup boiled and mashed peas
- 1/2 cup boiled cauliflower, finely chopped
- 1/2 cup boiled carrots, finely chopped
- 1/2 cup boiled beans, finely chopped
- 1 tsp turmeric powder
- 1 tbsp red chili powder (adjust to taste)
- 2 tbsp Pav Bhaji masala
- Salt to taste
- 1/2 cup water (adjust as needed)
- 1 tbsp lemon juice
- Fresh coriander leaves for garnish
For the Pav (bread):
- 6 pav buns
- Butter for toasting
Instructions:
- Prepare the Bhaji:
- Heat butter and oil in a pan. Add cumin seeds and let them crackle.
- Add finely chopped onions and sauté until golden brown.
- Add green chili and ginger-garlic paste, sauté for a minute until the raw smell goes away.
- Add tomatoes and cook until they turn soft and mushy.
- Now, add the mashed potatoes, peas, cauliflower, carrots, and beans. Mix everything well.
- Add turmeric powder, red chili powder, Pav Bhaji masala, and salt. Cook the mixture for 3-5 minutes, mashing it with a masher or spoon.
- Add water to adjust the consistency. Let it simmer for 7-10 minutes, stirring occasionally.
- Once done, add lemon juice and garnish with fresh coriander leaves.
- Prepare the Pav:
- Heat a pan and melt some butter.
- Slice the pav buns horizontally and toast them on the pan until golden and crisp on both sides.
- Serve:
- Serve the hot bhaji with a dollop of butter on top, toasted pav, and a side of finely chopped onions, lemon wedges, and extra coriander.
